\nIs it possible to reconcile gastronomy with gluten-free, tasty and healthy cooking, particularly by cutting the levels of fat and sugar? Yes! After training in star restaurants in Switzerland and France, even in Australia, Laurent Cherchi proves his commitment to the environment here. A few steps from the pretty Canourgue Square, he selects his often organic and always ultra-fresh produce locally from C\u00e9vennes to the Mediterranean (Aubrac beef, Camargue salt marsh lamb, Larzac Tomme cheese). Each dish has been pondered and puzzled over and technique and accuracy are de rigueur, illustrated by the pearlescent flesh of hake fish, carrots, parsnips and bergamot. The vegetables are the stars of the show. The interior sports a stripped back vibe by way of three dining rooms, the first of which overlooks the kitchen.
