Under the watchful eye of Cl\u00e9ment Bruno, a larger-than-life, benevolent father figure renowned for his veneration for truffles, and the two brothers \u2013 Samuel, front-of-house and Benjamin in the kitchen \u2013 uphold tradition with just the right measure of modernity thrown in. The truffle-based set menu is still on offer (the type of truffles changes in keeping with the seasons), but it now features more vegetables.
