Le Chef Fabien Ferré propose une gastronomie à l’identité locale qui célèbre et valorise le terroir provençal. Contrastant avec le classicisme chic et discret de l’hôtel, la salle du restaurant gastronomique propose un espace résolument contemporain. Volontairement épuré, son design arborant des tons clairs, où le bois et l’ardoise se mêlent harmonieusement."

A unique sweet experience, a talented pastry chef
The walls of this well-known luxury resort hide a certain definition of Provençal bliss. A park overlooking the Var hinterland, the Mediterranean on the horizon, ponds, lavender beds... and superb southern cuisine. Former second to Christophe Bacquié, Fabien Ferré achieves a masterstroke. His sensitivity to Mediterranean products is that of an artist, and recalls a Matisse who would have succumbed to the light of Provence. He creates a high-flying vegetal and marine score, like this carabineros shrimp with Meyer lemon and coral velvet, or this squid with marjoram. His refined and totally mastered dishes enhance the natural taste of the products, with the help of sauces of memorable depth, such as this vinaigrette flavored with aloe vera which accompanies the mackerel fillet. On the sweet side, pastry chef François Luciano ensures a fresh score where lightness competes with seasonality, like this grapefruit with meadowsweet and Rove bush. The cheese cellar is almost worth the trip alone. Very nice selection of wines, superb terrace for aperitifs and coffee.
