In the 2000s, Jean-Pierre Vigato reimagined it as a grand restaurant, and in 2018 it became the property of Laurent de Gourcuff and chef Mathieu Paco.
Now Apicius is reunited with the avant-garde in a simple pursuit of happiness, combining urban bucolic, chic gengett spirit and laughing greenery.
Mathieu Paco, accompanied in the patisserie by Jérôme Chausses, conducts the movement and re-enchants the classics. High gastronomy, French style and nobility of the product, which he asserts as modernity through his ambitious associations.
In the spirit of the new Apicia Bar appears as an enfant terrible at home. Sebastien and Thomas, two big names in the “spiritual” scene, combine their splendor here, maneuvering totem cocktails and unexpected creations.
