In the 2000s, Jean-Pierre Vigato reimagined it as a grand restaurant, and in 2018 it became the property of Laurent de Gourcuff and chef Mathieu Paco.
Now Apicius is reunited with the avant-garde in a simple pursuit of happiness, combining urban bucolic, chic gengett spirit and laughing greenery.
Mathieu Paco, accompanied in the patisserie by Jérôme Chausses, conducts the movement and re-enchants the classics. High gastronomy, French style and nobility of the product, which he asserts as modernity through his ambitious associations.
