Description
Located near the center of Toulouse, Hedone ("pleasure" in ancient Greek) is a small restaurant with wooden walls and a large modern fresco, where a dozen lucky guests dine on sumptuous dishes prepared by Balthazar Gonzalez. Using the highest quality ingredients, flavorful dishes are prepared carefully and consistently to a high standard.
FEELING THIRD? A fine collection of natural wines: Macerated White Garde by Le Petit Oratoire, Beaujolais by Jan Bertrand, Volnay premier cru by Frédéric Cossard…
MICHELIN Guide’s Point Of View.
* One Star: High quality cooking.
Don't be fooled by Balthazar Gonzalez's young age or his meek air: Hedone is proof that he is right on course and not about to waste time getting there! He has developed an effective concept: just five tables and a single set menu at lunchtime and at dinner, which allows him to give free rein to his creativity. You can expect to spend up to 3 or 4hr at the table, but the experience is more than worth the time! Excellent, even outstanding fresh produce, a preference for vegetables and seafood, explosive flavours with some real show-stopping moments. We can only salute his daring and applaud his skill.
