Description
The name Koori - translated from Japanese, this word means "ice" - is ideal for our restaurant, because every dish here is as flawless as ice floes sparkling in the sun. Masters of sushi, who are fluent in all Japanese culinary techniques, prepare their masterpieces from the most delicate and freshest ingredients. The main stars of the Koori menu are the Dragon Koori rolls and the wonderful Black Code - oven-baked miso, satay with squash pumpkin dumplings and butternut squash foam.
In this alternative to Le Comptoir de l'Apogée (mainly frequented by hotel guests), chef Jean-Luc Lefrancois shares his love for Japan and its culture - koori means "ice" in Japanese. The neat and sophisticated dishes on offer owe a lot to Japanese tradition, not to mention maki rolls and sashimi prepared in a time-honored tradition. A win-win option for lovers of Japanese cuisine.
