Description
Tucked away behind the ancient façades of the Pink City, Le Cénacle at La Cour des Consuls Hotel & Spa has for five years been the place where young Michelin-starred chef Thomas Wanderscher develops sophisticated and daring cuisine.
Originally from the Vosges and trained for several years in Occitania, it was his mentor Jérôme Rion, chef at La Barbacane in Carcassonne, who let him take off. Thomas loves scents, fruits, wild herbs, vegetables, and poultry and its varieties.
So many wonderful local products are honored at his table...
First of all, he thinks about his master, taste, experience and precision, about the sublimated nature on his plate.
Between tradition and innovation, his dishes always respect the work of local producers, whom he pays homage to in each of his creations, so that the adventure is grounded and sustainable, with a few exceptions with seafood, which are just as carefully selected. , Thomas does not wander 200 kilometers to find his treasures.
It invites you to a walk that is constantly updated according to the season, bright and delicious cuisine prepared with all modesty by a team whose beliefs and values know how to seduce their guests.
The opinion of the MICHELIN Guide.
* One star: cuisine of great finesse.
In this elegant Cenacle with a cozy atmosphere (superb sculpted 16C fireplace, reproduction of a Caravaggio painting, exposed beams), we make a point of establishing solid partnerships with good regional producers: organic vegetables from Gers, lamb from Béarn, line fishing... Definitely inventive cuisine with Mediterranean accents, and good value for money at lunch.
