Le Chiberta à la Guy Savoy sports a black colour scheme, has adopted wine as its symbol and inventiveness as its guiding precept. Softly lit, the swish, understated interior by Jean-Michel Wilmotte is refreshingly and fashionably minimalist. Its most eye-catching feature is undeniably an amazing “vertical wine cellar” which boasts a whopper selection of Burgundy and Bordeaux tipples that adorn the walls like rare books in a library. The cooking of chef Irwin Durand (Joël Robuchon, Bernard Loiseau), supervised by the “boss”, adds a modern twist to tradition (quenelle of pike, suckling pig, veal’s head, foie gras), whilst respecting the seasons. Tasting menus (on themes such as truffles and caviar) and wine pairings.
