La Mère Germaine
- MICHELIN 1 Star
- French, Mediterranean
Near the port of Nice, between the sea and the mountains, a stone's throw from the Italian border, there is a small authentic restaurant with jasmine and climbing wisteria. At the corner of Rue François Guizol and Rue Bonaparte hides the starting point of new horizons.
Chef Samuel Victory and his partner painstakingly and skillfully prepare dishes rich in texture and taste. The emphasis is on local suppliers: fruits and vegetables from Albert Luciano from Villefranche-sur-Mer, seafood from Thiers Coquillage. Their mentor: Michel Troisgros. Their concept: original, enthusiastic, taboo-free food. Fiction!
* One star: a cuisine of great finesse
These agitators are not just talking hot air: they are full of talent! Chef Samuel Victori (formerly second at Passage 53) and his partner Juliette Busetto offer elaborate dishes where textures, cooking and flavors are mastered. Here we work with local suppliers: baker, fisherman, market gardener, breeder, potter... Their mentor: Michel Troisgros. Their credo: original, invigorating, fun recipes that shake up tradition, to be enjoyed in a lively and friendly atmosphere, with attentive service. The place offers two dining rooms, one on the ground floor, and the other in the basement, with its wine cellar. The set menu changes very regularly according to arrivals. Right next door, Pirouette, a bistro created by the same owners, offers sharing dishes and natural wines.
