While this address has a typically Basque-style façade, the interior is resolutely modern (bare walls, wooden floors, designer round tables). In the kitchen, Andrée Rosier (the first female MOF in 2007!) and her husband concoct a seductive four-handed score. Our virtuoso never puts her technique forward: she prefers to talk about the taste and flavors she extracts from local products – wild fish and shrimp, squab and farm-raised poultry, in particular. Lemongrass and nori seaweed here, ginger and preserved lemon there, she boosts certain dishes with exotic touches – while the couple serves authentic Basque cuisine in their Tokyo restaurant.
