Hélène Darroz reopened the doors of her Marsan restaurant on rue d'Assas in 2019 to showcase a whole new look in a cozy and elegant way that is perfect for this talented chef. Needless to say, something special that distinguishes this descendant of a family of chefs from the southwest of France is still present in the dishes. Namely, the ability to scour these local regions (Aquitaine, Landes, Basque Country) in search of the raw materials she needs to satisfy her culinary designs, and the ability to highlight them in a given dish, for example, a magnificent monkfish from small scale fish.
