Is it possible to reconcile gastronomy with gluten-free, tasty and healthy cooking, particularly by cutting the levels of fat and sugar? Yes! After training in star restaurants in Switzerland and France, even in Australia, Laurent Cherchi proves his commitment to the environment here. A few steps from the pretty Canourgue Square, he selects his often organic and always ultra-fresh produce locally from Cévennes to the Mediterranean (Aubrac beef, Camargue salt marsh lamb, Larzac Tomme cheese). Each dish has been pondered and puzzled over and technique and accuracy are de rigueur, illustrated by the pearlescent flesh of hake fish, carrots, parsnips and bergamot. The vegetables are the stars of the show. The interior sports a stripped back vibe by way of three dining rooms, the first of which overlooks the kitchen.

"We mainly source our supplies from local producers – vegetables from Villeneuve-lès-Maguelone, flowers and wild plants from Lattes, fruit from the Gard and Rhone Valley, meat from free-range farming in the Pyrenees and Aubrac, line-caught fish, dry products and organic flours. Our wine list is exclusively composed of certified organic and biodynamic wines."
